Shannon Ridge Sauvignon Blanc

Notes of lemongrass, mango, tangerine, gooseberry, with a steely crispness, nice tropical fullness, depth and a complex long finish.
Paired With: Avocado Toast with Candied Bacon and Truffle Oil

Shannon Ridge Chardonnay

This Chardonnay has notes of pear, green apple, melon and citrus with undertones of lightly toasted coconut, oak, caramel and a long, juicy finish.
Paired With: Arugula Beet Salad, Burnt Orange Vinaigrette

Clay Shannon Pinot Noir

Garnet in color. Aromas of toasty oak & cherry cola. On the palate, flavors of vanilla, dried cherry and star anise. Mid-weight and balanced acidity.
Paired With: Smoked Chicken Wings with Peach BBQ

Shannon Ridge Wrangler Red Blend

This wine is a blend of Zinfandel, Syrah, Petite Sirah, Merlot, Mourvédre, and Cabernet Franc, creating a multi layered wine of great depth and silky smooth finish. The clusters from High Valley bring structure and backbone and the Red Hills Appellation contributes lush fruit, ripe characteristics, and add tannin and fleshy tones.
Paired With: Grilled Flank Steak, Cheddar Smashed Reds, FrenchGreen Beans, Cherry Chipotle

Buck Shack Cabernet Sauvignon

Aging Cabernet Sauvignon in bourbon barrels shows off the natural ripe fruits while softening the tannins and adding an aged balance to the wine. Each sip resonates with rich hints of bourbon.
Paired With: Flourless Chocolate with Candied Almond Crunch

(Cabernet Sauv, Merlot, Petite Sirah, Malbec & Cabernet Franc) Aromas of raspberry, plum, black currant, leather, toasted vanilla and anise. On the palate, bright red fruit flavors lead to smooth tannins and subtle acidity.
On the nose, Meyer lemon, passion fruit, grilled pineapple, and guava. Nectarine, papaya, and crisp tangerine notes are complimented by touch of spice and complex minerality on the palate.
Poached shrimp with cucumber, tomato, scallion, with avocado puree, mango coulis and crispy tortilla chips.
Shaved lamb cooked with basmati, almonds, dried cranberries and garam masala with a side of cucumber tomato raita and tamarind chutney.
